Blow your socks off thai vegetable curry

Tonights dinner, a spicy veggie packed curry. You could serve this with brown rice or cauliflower rice but i like it just as a bowl of curry to eat with a spoon (messy!)

It is sure to warm you up on this very chilly evening!

Whatever veggies you have, i like to add courgette to this too, fry in a little olive oil with garlic, fresh ginger, chill and a little thai paste. Add coconut milk and a dash of lime and your all set.
