500g shin beef
1tsp coriander, cumin, fennel seeds
2 tsp paprika
Ground black pepper
1 onion, ginger, garlic, 6 cardomon pods, 1 cinnamon stick, 1 tbsp fenugreek seeds
Water, salt and lemon juice
Half tin coconut milk
Combine the beef and dry spices. Chop the onion, garlic and ginger quite fine. Heat a little ghee in a le creuset type casserole, add the onion, garlic, ginger, cardomon, fenugreek and cinamon. After 5 mins add the beef, stir around then add 350 ml water, juice of a lemon and a half tsp salt.
Stir and cook on a low oven (100) for two hrs. Then add coconut milk and some green crisp veg like beans or mange tout.
