Lovely lentil salad…

  

  • Cooked puy lentils (cooled)
  • Cooked chickpeas (cooled)
  • Podded broad beans
  • Spring onions
  • Red pepper
  • Half a deseeded red chilli chopped
  • Dressing of ev olive oil, lemon juice, s&p, balsamic

Just toss it all together and keep in the fridge. I would recommend usind dried beans, cooking yourself, in large batches and then freezing. The taste and texture is far superior to tinned.
