- Cooked puy lentils (cooled)
- Cooked chickpeas (cooled)
- Podded broad beans
- Spring onions
- Red pepper
- Half a deseeded red chilli chopped
- Dressing of ev olive oil, lemon juice, s&p, balsamic
Just toss it all together and keep in the fridge. I would recommend usind dried beans, cooking yourself, in large batches and then freezing. The taste and texture is far superior to tinned.
